For the past few years Rachael and I have had something different for Christmas Dinner. Last year it was Lamb, the year before that it was Pheasant. This year we went with Buffalo roast. After a trip to the local butcher, who had never had a request for Buffalo roast, Rachael ordered a 4-5 pound loin. Due to a horse emergency I had to pick up the meat. When the person handed me the roast I thought it was a little big. When I saw the price I had a bit of sticker shock, but thought that was it. I later found out I could have had it cut down, instead I walked out with a 8.42 pound of buffalo.
In the end it turned out fine we froze half and had Karen over for an unbelievable Christmas dinner.
Not to mention plenty of leftovers.
I am not sure what will be on the plate next year, but it probably won't be Buffalo.

I thought buffalo was endangered? I guess not anymore.
I once tried to buy buffalo yarn and it was something like $40 per skein of 50 yards. 50 yards will give you about 1/4 of a scarf. I bought alpaca instead.
